Querétaro cuisine involves procedures that have been carried out in the region ever since the times of the Colony in the 16th century. Hence, throughout the years, locals have been trying to find ways to continue using pre-Hispanic ingredients like corn, chili, cacti, and the fruits that identify this type of Mexican cuisine.
A permanent use of the aforementioned ingredients shows the powerful presence of an indigenous past. For example, the nopal-cooked in any of various ways-the candy made from bisnaga, huamiche and xoconostle, the varieties of chili and corn found in atole and tamales, and Otomi-style tortillas, all have become integrating elements that have given rise to Querétaro cookery.
Queretarian gastronomy is linked to lay and religious celebrations, which provide an opportunity to appreciate the magnificence of our cuisine. Examples of this are the annual harvest cycles of these ingredients, which coincide with patron saint celebrations like the Holy Cross, Holy Week, and Day of the Dead, to mention but a few.
Queretarian cuisine, with its wealth, variety, and presence, is part of the national gastronomical heritage.
